Echinacea Flowers at the Community Garden, Jacquelyn Block

This morning my breathing was improved enough to make my overdue visit to our plot at the Community Garden. It was a beautiful visit, as we got there before the heat and humidity of the afternoon set in.

Giant zucchini, Jacquelyn Block

The weeds were not nearly as bad as I expected after missing a week, but boy did my zucchini grow! I harvested three giant zucchini and one still big but the perfect size for tonight’s dinner. I shared one of the big boys with my mom. Our garlicky Zucchini stir fry was delicious and I plan on making a batch of zucchini stew tomorrow. My oldest daughter can’t stand zucchini so we have to get our fill while she is away this summer.

In addition to the bounty from our vegetable plot, we enjoyed the beautiful flowers growing in the community beds. The pollinators were out and about visiting each bloom along side us.

What’s your favorite way to eat zucchini?
